German Potato Salad
Sally Strackbein

2 cans potatoes
1 small onion
3 T bacon pieces (Hormel in a jar is good)
1/4 cup oil
1/4 cup vinegar

Cut potatoes in potato salad size pieces. Chop onion. Sauté onion in oil. Add bacon and potatoes. Cook for a few minutes. When very hot, add vinegar. You can add a little sugar if you want.

Serve hot or cold.

Sally's comments: Greg, our friend from Canada, came for dinner unexpectedly the day after I came up with this recipe. I stopped at the store on the way home and bought hamburger to barbecue and forgot to get chips. The leftover potato salad saved the day. He actually thought it was good.
