Tomato Macaroni and Cheese submitted by Alice Panethiere in Olathe, Kansas
"My Grandpa shared that he watched his Mother make this while warming next to the cookstove after being caught outside in a snow storm. I now serve it to my Grandchildren as a quick and easy meal. It
is one of their favorites to take and fix over a campfire."
2 cups of macaroni 1 cup of cubed sharp cheese or 1 can of cheese soup 1 large can of whole tomato, cut into chunks (or canned, diced tomatoes)
Cook macaroni and drain. reserve about 1 cup of macaroni water. Return 1/2 of the reserved water to the pan. Layer macaroni, cheese and tomato back into the pan.
Cover and let simmer until cheese has melted...about 5 -10 minutes. Add more water if needed to keep everything moist. You can also put the layers into a baking dish, or Dutch Oven, and bake until everything melts together.
